Okay, Everyone who enters this site will be taking the best journey of their life. I will help you every step of the way. I will be reviewing the book Eat to Live and today I am starting my journey as a vegetarian. Thirty one years ago on this day my father died because of an eating disorder. A massive heart attract that ended his life to short at the tender age of 51. My brother also died at the age of 47 in the same bedroom exactly 25 years apart.  I do this in honor of them  as they were my rock. I want to eat the healthiest I can from this day forward....I would love for you to join me as I start TODAY!

If you are on this site...Jump onto my bus. This is the bus that will take you on the ride of your life. Eat to Live by Joel Fuhrman, M.D. is about to be unrevealed and set to the test. I give my life to his ways and teachings for one year. All I ask is you come with me and do as I do and even grab a copy of the book. He was on Dr. OZ and makes the most sense to me.  Come now, JUMP ABOARD!  Lets Roll!!

  1. Day one was great. For Breakfast I had strawberries, orange, and cantaloupe with flax seed sprinkled on the top.

    Lunch it was a salad with portobello mushrooms. I just realized I could of had it with a pita. Darn! I also forgot the beans. Double Darn!!

    Dinner I made the Golden Austrian Cauliflower Cream Soup and had a salad with red peppers and tofu ranch dressing. For desert I had strawberries sprinkled with cocoa powder.

    I got up at 6:30 am and walked/ran 3 miles and then swam for about 20 minutes. About one hour and a half of exercise. I feel contented and I have passed my first day.Bravo! 189

  3. Day 3
    Exercised for 90 minutes on the bike. Last night was a bit off. My daughter made popcorn and I had a handful and we opened a jar of cashews and I had a couple handfuls. Although the raw cashews were part of a dish, these were lightly salted and a no no as they were roasted. But still on the vegetarian roll and going strong. I had strawberries and bananas for breakfast sprinkled with flax seed. 186

  4. Day 4
    Took a 3 mile hike today. Had fruit for breakfast and had dehydrated beets for lunch. Had a very busy day but didn't forget about the blog. Bought raw cashews, miso, unsweetened coconut and spinach for some of Dr. F's recipes. I feel run down today. I think it is this 100 degree weather.

  5. Don't even ask how I came about this site but here I am. You have made a commitment for a whole year. I find that it takes courage to do something like this. Most people, (like myself) will want to see if you stick to your word. I think you will as you picked the word sticklers in the title. I myself know at this time I could not make such a commitment in any eating plan. I am the yo-yo, on it, off it.
    I will pledge that I will be following your journey in hopes that you will inspire me to hop on the trail with my own journey. I am in grave danger ignoring what I need and must do for myself.
    I will look on each and everyday for your post. Maybe not everyday but I will be watching your posts. Will you be there each day? Your action will speak the loudest to me and everyone else that finds you.
    I may not take your root as an eating plan but I am hoping that somehow this may give me the nudge to act.

    Jasmin, Thank you for getting on the bus. I was at the mall today and walked into the Chocolate Factory just to look. All that wonderful fudge staring at me in the face. Then I remember what my son in medical school said....."There, the chocolate is waiting for you, you know you have to eat a piece as it is looking for a home, BUT IT WILL TAKE 2 HOURS OF EXERCISE TO BURN IT OFF!and that's ONE PIECE!" So you know what I did. I took a picture of it with my camera and left the store. Temptation is a killer! We must experience a little pain, and that is to resist those little devil thoughts in our mind. Now I drank a half a bottle of water and I am satisfied. For breakfast I had DR F's orange, strawberry, cantaloupe with flax and hemp seed sprinkled on it. For lunch I had a spinach salad with a few walnuts, onions and raspberry vinaigrette with 2 eggplant and sauce. No cheese! Now we must pretend in our minds that we have an illness and we are on a iv drip. Don't put anything into your body that will hurt it in any way. Still to his program. This is my 4th day and I am going strong. I did have a coffee around 5. Actually an espresso. It keeps me charged. I don't drink it every day but I bought a bottle B pollen and will take a couple granules every day and see if that gives me the extra energy. Now you stay strong Jasmin

    I had cantaloupe for breakfast sprinkled with hemp seeds and flax seeds. It really does seem to fill you up. I am surprised!
    Not in the book but melons should be eaten alone, not mixed with other fruits. 185

  10. dressing for salads- Oranges, raw cashews, toasted sesame seeds, blood orange vinegar, and lemon. Put in blender or food processor.

  11. Handy Dandy!! Life is good. First week your body is changing. I gave up dairy, meat, fish, eggs, white sugar, white flour, most salt, all processed foods, fried foods, cheese and white potatoes. That's about everything. Yikes! Is there anything left to eat????

    I am now putting chick peas and black beans into all my salads. I made the wonderful cashew dressing but it needed a zip so I will be putting a clove of garlic in the blend next time. Still on track......Someone join this blog!

    1. Well, I am reading your writings and that cashew dressing sounds a bit yummy. I know trying it will not hurt me so I should at least try something you are discovering.
      I have for the first time this past week bought some black beans to add with my taco's. Maybe this is some sort of sign. You mention black beans and I had just bought some a week ago. I mean that yes, I have eaten them before but it's the first time I ever added them to my grocery list. I find that slow changes are longer lasting than doing everything fast paced for myself. I guess if your willing to give me the recipe, I will give you my word that I will try it. Glad you didn't eat that chocolate. Wow, not worth all the exercise you would have to do now is it.

    Four years ago I was obese and my blood pressure was averaging 155/95, and now it's consistently around 105/65 . . .without medication.

    My 86-year-old mother, Helen, gave herself injections of insulin four times a day for over twenty years, and today she’s no longer taking it.

    Ronnie, after suffering from open heart bypass surgery, and then stent procedures, woke up in the recovery room with more chest pain and was sent home to die with $600 of meds a month. He is now the epitome of health and fitness, and taking absolutely no medications.

    Pam, having ovarian cancer, and told by a couple of physicians that she only had a few months to live, decided not to accept that fate - and that was fourteen years ago. Today she glows with a vibrant radiance seldom seen in women her age. (Pam's interview will be featured on Disease Proof in the near future; stay tuned.)

    Elisa, in her late 20’s, was bedridden and unable to function due to the devastation of lupus symptoms. She was put on nearly thirty medications to no avail. Today, in her early 30’s, her blood tests are normal, and she’s off all medications, except one as needed. She has her life back and shines with exuberant health.

    Anthony, a young high school graduate was obese and heading down a dangerous path. Today he is slender and buff, and most importantly bypassing a future of obesity related diseases.

    Bonnie was a young woman who had cystic acne so bad that it was painful to smile, and the blemishes eroded her self esteem. Her dermatologist said that diet wouldn’t help, and she was put on several prescription drugs over the years. Nothing worked. However, today she no longer has acne flare ups and is medication free.

    Augie, at the age of 83, takes no medications, feels great, and has run in 40 marathons since his 70th birthday. His youthfulness is evident to all.

    Barb was succumbing to the typical symptoms of middle age women; increase in PMS, bloating and fatigue that led to inactivity. Today she’s trim and active; hiking mountainous terrain and riding her bike to work.

    Scott, having lost 333 lbs without gastric bypass surgery is no longer homebound and today is a serious cyclist.

    Jodi, having suffered with incapacitating psoriasis for over 30 years and the terrible side effects of meds to alleviate the rashes finally is symptom free without medication. Today her skin glows with radiant beauty.

    Mark was on four prescriptions for asthma, and used an inhaler every morning upon waking up. Being a middle aged man who lost his father to heart disease, Mark lived in fear of experiencing a heart attack. Today he no longer has asthma, is medication-free, and is off the radar screen for heart disease.

    I’ve personally interacted with each person named above. They are the real deal. And they are just the tip of the iceberg of people all over America and beyond who are getting their health restored by following Dr. Fuhrman’s high-nutrient eating style.

  15. Chew 25 times before you swallow.

    Chew, chew, chew!


    When eating a salad or raw vegetables, always remember to chew thoroughly. Chew each mouthful until every piece of food is liquefied. Eating slowly is the best way to absorb all the beneficial nutrients from the vegetables. You can access the full nutrient load from the food by breaking open every single plant cell because many critical nutrients are created in your mouth as the enzymes are liberated and mixed together there during the chewing process. Plus, eating too quickly encourages overeating and can tax the digestive system. It takes about fifteen minutes for your brain to realize that your stomach is full. If you eat too fast, your body won't have enough time to tell you when it's full. You will end up eating more than you really need. Eating lots of crunchy raw vegetables and nuts and chewing them well will also exercise your jaw and help you develop healthy gums and teeth. Slow down, thoroughly chew your food, and enjoy the experience of eating.

    Here is a simple tip that I try to share with my family and friends, but it is hard for me to explain: After you place food into your mouth (by hand, fork, spoon, chopsticks, etc.) put down the tool. Let go of the fork, spoon, etc. The brain will be totally engaged in the chewing process when nothing is held in the hand. The brain will not let you swallow until your food has been totally chewed, because of the "total awareness" of what is in your mouth. If you have in your hand more food, or the tool that is holding the awaiting next mouthful, your brain will be more engaged with using the tool and cannot resist using it (shoveling more food into the mouth) in spite of the mouth not being ready (not finished chewing) for the next bite. The brain has developed such a strong relationship with the tool that it has created, that the tool distracts it. The tool keeps signaling the brain to use the tool. Put the tool down and then "the food" already in the mouth can remain and signals the brain to remain engaged in the food that is already in the mouth. The brain will not let you pick up the tool again until the brain and the mouth and your teeth and the saliva and enzymes have all finished doing THEIR JOB! (the tool and its job has to wait its turn). Pretty fascinating when you observe the impact of our man-made tools and how they have influence on digestion. We need to allow the brain to engage in the intelligence and sensual pleasure of chewing and enjoying our food. Proper and complete digestion and cell absorption of all life giving "raw" nutrients begin in the mouth and requires the attention and cooperation of the brain. Empty the hand for mindful chewing and greater satisfaction in the eating experience. Allow enough TIME to EAT slower and allow your saliva and stomach secretions to FLOW. You may prevent hunger, stomach pain, heartburn/ acid reflux, constipation, diarrhea, etc. by simply allowing yourself some time to perform the very important function of eating for your HEALTH.

  18. Day 8- Three mile hike and swam today. Had Oatmeal with peaches for breakfast sprinkled with cinnamon and a couple currants. Lunch had the iron man salad with greens, onions, mushrooms, garlic, berries, capers, white raisins, chick peas, black beans, red and yellow peppers, zucchini, and had cashew dressing on top.
    I am a sweet tooth. I have to have fruit with every meal. But its better than cookies, ice cream and chocolate. Wow! What a switch. I am all filled up!

    Breakfast was oatmeal, peaches, white raisins, flax, nutmeg, cinnamon and a splash of organic plain soymilk. No added sugar of any kind. Only sugars must come from fruit. I feel energized!

  21. Had a huge salad for lunch with grated fennel and 2 tiny egg plants with sauce. No cheese. I did have a tiny piece of crusty bread with garlic and chive butter. Couldn't resist. It is 7:21 and I am still full from lunch...Amazing!

    Still going strong. Exercise bike today. Oatmeal and fruit for breakfast. Huge salad for lunch and sauteed mushrooms for dinner with an orange. I feel delightful. My insides are screaming with delight!

    Everything went well today. Ate about the same. Leaving for a 4 day trip to Chicago. I hope I can find a way to log in while I am away. The true test of eating out will surface. Cheerio! I leave at 4:30 AM

  27. Green Drink Ingredients
    Makes 3-4 servings (about 28-30 oz)


    2 cups spinach
    1/2 cucumber
    1/4 head of celery

    1/2 bunch parsley

    1 bunch mint

    3 carrots

    2 apples

    1/4 orange

    1/4 lime

    1/4 lemon

    1/4 pineapple



    Directions

    Combine all ingredients in a blender. Serve and enjoy
